Tuesday Treats: Easy Applesauce Muffins

This week on Tuesday Treats, we have a recipe for Easy Applesauce Muffins. You can use this recipe to teach your  kids how to mix wet and dry ingredients, scoop batter into muffin tins and check for doneness.

Prep Time: 10 minutes

Cook Time: 20 minutes

Makes: 12



Ingredients:

  • 6 tablespoons butter
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 eggs
  • 2/3 cups brown sugar
  • 1 1/2 cups chunky applesauce

Directions:

  • In a small microwave-safe bowl, melt the butter on high for about 30-60 seconds. Set aside to cool slightly. 
  • Sift together the flour, baking powder, baking soda, cinnamon, and salt into a large mixing bowl. 
  • In another large bowl, whisk together the eggs and brown sugar. Stir in the applesauce and melted butter until the mixture is smooth. 
  • Pour the apple mixture over the flour mixture. Mix with a wooden spoon until combined. Once it is completely mixed, you shouldn't see any traces of the flour. 
  • Fill the muffin pan or baking cups about two-thirds full with batter. Bake at 375 degrees for 20 minutes or until light brown. You can test for doneness by inserting a toothpick into the middle of one of the muffins. If it comes out clean, the muffins are ready to ear.
