Tuesday Treats: NILLA Sand Cups

These easy to make NILLA Sand Cups are great as after school treats or for snacks at your child's birthday party.

Prep Time: 15 minutes


Ready In: 1 Hour 15 Minutes


Makes: 8 servings



Ingredients:

  • 1 quart cold milk
  • 2 pkg. (4 serving size) JELL-O Vanilla Flavor Instant Pudding & Pie Filling
  • 32 NILLA Wafers, finely crushed, divided
  • 8 paper or plastic cups (6 or 7 oz)
  • 8 worm-shaped chewy fruit snacks (can also use fish shapes, sharks, or any other animals)

Directions:

  • Pour milk into large bowl. Add dry pudding mixes. Beat with wire whisk 2 minutes or until well blended. Let stand 5 minutes. 
  • Place 1 tablespoon of the wafer crumbs in the bottom of each cup; cover evenly with pudding. Top with remaining crumbs. 
  • Refrigerate 1 hour or until ready to serve. Garnish each cup with a fruit snack before serving.

Tuesday Treats: Crunchy Yogurt Sundaes

Yesterday, Laura over at Real Mom Kitchen posted a Crunchy Yogurt Sundae recipe that she found over at Betty Crocker. It sounded so yummy and (obviously) kid-friendly that I decided it would be the featured recipe in this week's Tuesday Treats.

Prep Time: 10 minutes


Makes: 2 servings

Ingredients:
  • 8 medium strawberries
  • 1 cup Cinnamon Toast Crunch cereal
  • 1 1/3 cups Yoplait 99% Fat Free creamy strawberry yogurt 
Directions:
  • Cut 6 of the strawberries into 4 slices each. Place 6 slices in each of 2 parfait glasses. Sprinkle 1/4 cup cereal over strawberries. Pour about 1/3 cup yogurt over cereal. 
  • Make another layer of strawberries, cereal, and yogurt. Top each sundae with a whole strawberry. Serve immediately. 
If you or your child doesn't care for strawberries, you can always substitute them for peaches, blueberries, raspberries, ect. Purchase the yogurt flavor that matches your fruit of choice and make as directed.

Tuesday Treats: Easy Applesauce Muffins

This week on Tuesday Treats, we have a recipe for Easy Applesauce Muffins. You can use this recipe to teach your  kids how to mix wet and dry ingredients, scoop batter into muffin tins and check for doneness.

Prep Time: 10 minutes

Cook Time: 20 minutes

Makes: 12



Ingredients:

  • 6 tablespoons butter
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 eggs
  • 2/3 cups brown sugar
  • 1 1/2 cups chunky applesauce

Directions:

  • In a small microwave-safe bowl, melt the butter on high for about 30-60 seconds. Set aside to cool slightly. 
  • Sift together the flour, baking powder, baking soda, cinnamon, and salt into a large mixing bowl. 
  • In another large bowl, whisk together the eggs and brown sugar. Stir in the applesauce and melted butter until the mixture is smooth. 
  • Pour the apple mixture over the flour mixture. Mix with a wooden spoon until combined. Once it is completely mixed, you shouldn't see any traces of the flour. 
  • Fill the muffin pan or baking cups about two-thirds full with batter. Bake at 375 degrees for 20 minutes or until light brown. You can test for doneness by inserting a toothpick into the middle of one of the muffins. If it comes out clean, the muffins are ready to ear.

Tuesday Treats: English Muffin Pizzas

Welcome to Tuesday Treats, a brand new series that will bring you family-friendly recipes that both you and your kids will {hopefully} enjoy!

This week we are going to kick off the series with English Muffin Pizzas. Growing up, I fondly remember going over to my Nana's house, where we would often make these for lunch. These are quick and easy to prepare and perfect for introducing your kids to cooking!



Prep Time: 5 minutes

Cook Time: 5 - 10 minutes

Ingredients: 

  • English muffins (can use whole wheat for a healthier option)
  • Shredded Mozzarella Cheese (can use part-skim mozzarella cheese for a lower fat option)
  • Tomato Sauce 
  • Pepperoni or other toppings such as peppers, onions, mushrooms, ham, pineapple - whatever your kids will eat! 
Directions:
  • Slice the English Muffin in half
  • Top each half of the English Muffin with the tomato sauce 
  • Top with mozzarella cheese
  • Add a few pepperoni slices or any other of your favorite pizza toppings
  • Place your pizza on an aluminum foil-lined baking sheet and cook in the oven (or toaster oven) at 400 degrees. 
  • Bake for 5-10 minutes or until the cheese is melted. 
  • Enjoy!
